It is finally strawberry season! We picked the perfect sugar-sweet strawberries at our local strawberry farm. We’ve never tasted such juicy and delicious strawberries - a truly unbeatable flavor!
We absolutely love to dip strawberries in chocolate for a quick and delicious snack!
But, if you are looking for another easy summer fresh dessert, look no further!! Try my mini strawberry napoleons! You won’t be disappointed.
We usually don’t have dessert for breakfast, well maybe in this case … It’s amazing what you can do with the basic staple ingredients we have in our kitchens. If you don’t have gluten free puff pastry sheets in the freezer, you can always make it at home (it just takes a little longer …)
My daughters and husband devoured these mini napoleons! They were all gone by mid-day and I made 9!! I only got one 😞
Mini Strawberry Napoleons
1 sheet Schar gluten free puff pastry
4 oz. cream cheese
1/4 cup powdered sugar
1/4 cup whipped cream
1/2 tsp. vanilla extract
1/2 lb fresh strawberries sliced
1 tsp. granulated sugar
1 tbsp. raw cane sugar crystals
1 egg
Thaw and cut puff pastry sheet into 9 rectangles. Brush with egg beaten with a teaspoon of water. Sprinkle with cane sugar crystals. Bake at 400 F for 15 minutes or until golden brown and puffed up beautifully. Let cool for 30 minutes.
While puff pastry is cooling, mix thawed cream cheese, powdered sugar, whipped cream and vanilla. I don’t mind mine with a few chunks of cream cheese, but some like it smooth and blended. Feel free to do as you please. In a separate bowl macerate sliced strawberries with sugar and let sit for 15 minutes until juices are all syrupy.
Split cooled puff pastry rectangles down the middle, spread with cream cheese filling and top with strawberries. Enjoy!
Refreshing, and rather low sugar (compared to most desserts) summer treat!
